Which will win? Tempeh versus Tofu? Does it matter? Both are quite healthy for you.
Tempeh
In my experience tempeh is easier to cook with and has more substance to it. I think its more expensive though. It also has a stronger, nuttier flavor that tofu.
Tofu
Tofu can be challenging to cook with if you are trying anything beyond the easy stuff like putting it in pasta sauce or soup. Frying it can be a pain, if it crumbles you end up with a bit of a mess. I've had good luck frying it in peanut oil because you can heat peanut oil up much higher than olive or vegetable oil before it burns. I would heat up the oil but not too high to burn it, and then gently place small cubes of tofu in the pan to brown the sides, rotating the cubes occasionally to prevent them from sticking to the pan. This way you don't have to submerge them in oil. Remember to be careful when cooking with oil! It gets hot and the spatter can burn so be sure to get some cooking instructions before going for it.
