coconut cilantro chicken

I discovered this tasty way to make a rub for chicken on the fly yesterday preparing a celebratory meal for my honey, who just got a great new job.here's the deal. I found fresh coconut at the whole foods, chopped into chunks. I brought it home and grated it on a fine grater, as it grates the coconut becomes soft and oily. I grated maybe a quarter cups worth, not too much, but enough. I also added in a few pinches orange zest, cumin, lime, and fresh cilantro. because of the nature of the coconut the rub was a thick buttery substance rather than a runny oily substance. I rubbed the spices between the skin and the meat and put her in the over to cook (oh i also tossed the carcas of the lime inside the chicken. The citrus removes any foul flavor that the chicken may have).The beauty of this rub is it actually stays on the chicken and allows it soak in the flavors applied.I'm going to try it with other seasonings too.
