Forever Scallions

scallions.jpgI'm always buying fresh herbs and spices to go in my cooking. It's a constant challenge to keep the herbs fresh, and usable over long periods of time. About a month ago I bought some scallions they were whole scallions with the roots attached, so after I lobbed off the part I was using I put the remainder in water figuring I'd use it in a few days or toss them. I don't know why I decided to put them in water, but I did maybe the roots were telling me they were thirsty. The next day I walked in my kitchen and noticed the scallions were sprouting through the roots. I know this happens, as my friend grew an entire mint plant this way, but still it's quite impressive to see.I now have a seemingly limitless supply of scallions. I've already chopped fresh growth and used it in my cooking once, and can you believe it they grew back again. Best 79 cents I ever spent at the market.
