Parboiled Potatoes

This was a yukon gold potato, and I was quite surprised at how long it took to soften up. I parboiled it for about thirty minutes, and then added it to the peppers and onions pan fry for another ten to fifteen minutes:

This was all done for some awesome burritos. If potatoes are spelled with an "e" at the end, why not burritos? Too much like the appendage?
