Broccoli and Vitamin K

Steamed Broccoli

I suspect I may have a vitamin K deficiency as I bruise easily.

I eat a lot of lettuce because of this, but also because I like salad.

Then I heard on the radio recently that lettuce tops the list of foods at risk of carrying airborne illness. I thought: "Maybe the risks could be alleviated if the food were cooked?"

Hmmm. Anyone want some cooked lettuce?? Didn't think so.

I started to think about lettuce alternatives that can be cooked. There is kale and spinach, and while at Trader Joe's today I spotted some pre-chopped broccoli. I was surprised it wasn't too expensive so I bought it without knowing exactly how much vitamin K it has in it.

Thanks to the nutrition database, I now know that 1/2 cup of chopped and boiled broccoli has 110.1 mcg of Vitamin K (phylloquinone).

Also thanks to the nutrition database, I now know that one cup of shredded romaine lettuce has only 48.2 mcg of Vitamin K. Surprise surprise.

I'm going to stick with steamed broccoli. I'll occasionally spring for some kale too, but its been my experience that it is harder to get in small batches.
